Ultra Mel Cake-In-A-Mug

INGREDIENTS:

  • 1 cup (160g) self-raising flour
  • ½ tbsp baking powder
  • ½ cup castor sugar
  • ½ tbsp ground cinnamon
  • ½ cup milk
  • 100g butter, melted and cooled
  • 4 eggs
  • 1 tbsp vanilla essence
  • 1 cup (250ml) Ultra Mel Custard Flavoured Dessert Original 1kg, plus extra to serve

DIRECTIONS:

  1. In a medium bowl, mix together the self-raising flour, baking powder, caster sugar, and cinnamon.
  2. In a separate jug, whisk the milk, melted butter, eggs, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until fully combined.
  4. Divide two-thirds of the batter evenly between 4 x 375ml (1½ cup) microwave-safe mugs. Spoon 60ml (¼ cup) of Ultra Mel Custard Flavoured Dessert Original into the centre of each mug, then cover with the remaining batter.
  5. Microwave each mug individually on high for 1½ to 2 minutes, or until risen and cooked through.
  6. Serve warm with a sprinkle of cinnamon and a generous drizzle of Ultra Mel Custard Flavoured Dessert Original and ENJOY!
