Dessert Cheeseboard

UltraMel isn’t just for desserts. Using our secret ingredient, goat’s cheese, you can create a unique cheeseboard when you’re entertaining friends and family. 


Goat cheese mousse
  • Goat cheese mousse
  • 400ml Ultra Mel Vanilla Custard
  • 200ml Chevre goat’s milk cheese
  • 2 gelatine leaves
  •  1 cup of cream
Pickled fruit
  • Stone fruit/pears (2 of each)
  • 400ml white wine vinegar
  • 400ml sugar
  •  Thyme
  • A container of halloumi cheese
  • Butter for frying
  • Flour for dusting
  • Mixed, chopped nuts
  • Honey for coating



Pickled fruit: Combine the water, vinegar, sugar and thyme. Boil the mixture. Once boiled, add the mixture to a bowl with the chopped fruit. Cover and leave to infuse.

Cheese mousse: Reduce the cream to half (thickened consistency) in a saucepan, over a medium heat. Mash-up the goat’s cheese in a  bowl and whisk in the cream with the cheese and custard. Add the bloomed gelatine and mix in well until there’s a nice, smooth consistency. Add in the Ultra Mel. Place in the fridge to set.

Puff pastry shards: Brush off the pastry with melted butter. Bake as instructed until golden brown.

Halloumi cheese & nuts: Portion the Halloumi cheese into desired bite sizes. Coat the cheese with flour in a bowl. Sauté the cheese in a frying pan with butter until over a medium heat until golden in colour. Sprinkle the chopped nuts onto a baking tray and squeeze some honey over the nuts. Bake for a few minutes on a medium heat.

Serving: Add all the cheese, fruit and nuts to a cheese board for serving.
